Peel and finely slice garlic, chilli and ginger
Pick leaves roughly of coriander, then thinly slice the beef steak
Cook the rice noodles in boiling salted water per the packet instructions, then drain and set aside
Heat a splash of vegetable oil in a large wok over a high heat, add the beef slices, garlic, ginger and chillies and stir-fry until just cooked
Add vegetables and a good splash of soy sauce, sesame oil and lime juice
Add noodles and stir for 30 seconds
Add the coriander and toss until well mixed with the beef then serve
